Banana Recipe Banana, Carrot and Walnut Cake Ingredients - Serves: 8 Cake • 175g soft brown sugar
• 3 medium eggs
• 175g plain flour
• 2 teaspoon baking powder
• 1 teaspoon Sea Salt
• 1 teaspoon bicarbonate of soda
• 175ml sunflower oil
• 90g walnut pieces
• 175g carrot, grated
• 2 medium ripe bananas, mashed Icing • 75g butter, softened
• 75g cream cheese
• 150g icing sugar, sifted
• 1 teaspoon vanilla essence
• 30g walnuts, chopped for decoration Directions Preparation: 25min › Cook: 1hour15min › Ready in: 1hour 40min • Preheat the oven to 170 degrees C.
• Lightly oil a 50cm springform pan.
• Beat the eggs and the sugar together until pale and thick.
• Sift in the flour, baking powder, Sea Salt and bicarbonate of soda.
• Mix well then add the oil and walnuts.
• Then the carrot and banana.
• Pour the mixture into the springform pan.
• Bake for 1 1/4 hours or until a skewer inserted into the middle of the cake comes out clean.
• Cover with foil if the top of the cake begins to brown too quickly.
• Take out and cool on a rack.
• Icing: beat the butter and cream cheese together then add the sugar and vanilla.
• Spread onto the cold cake.
